The moment the wooden sliding door opened, the gentle aroma of fish broth mingled with the warmth of aged wood, wrapping around them like an old friend. Outside light and noise stayed behind the door.<\/p>\n

Nam, holding his chopsticks, glanced at the street.
\n\u201cKitaro, have you noticed? Japanese restaurants in Vietnam are popping up like mushrooms after rain.\u201d
\nBack in 2015, there were only around 770. By 2020, the number had grown to nearly 2,500 \u2014 more than tripling in just five years.<\/p>\n

Kitaro took a slow sip of the golden broth and nodded.
\n\u201cTrue. In Shanghai, the numbers have plateaued, but here\u2026 it\u2019s still growing. Ho Chi Minh must have the most, right?\u201d<\/p>\n

Nam nodded again.
\n\u201cAbout 944, mostly in District 1 and District 3. The streets of L\u00ea Th\u00e1nh T\u00f4n and Th\u00e1i V\u0103n Lung \u2014 people call it \u2018Little Tokyo.\u2019\u201d<\/p>\n

\u201cHanoi isn\u2019t far behind,\u201d Nam added. \u201cOver 40 famous Japanese restaurants \u2014 Hatoyama, Okita, Ginza Sushi Express. Chains too: Isushi with over 20 branches nationwide, Kichi-Kichi with more than 100 in 29 provinces, and Tokyo Deli with 13 in Ho Chi Minh City and 2 in Hanoi.\u201d<\/p>\n

Through the steam of his bowl, Kitaro smiled, half-joking.
\n\u201cJapanese food isn\u2019t just for the tongue \u2014 it\u2019s for the eyes. If Vietnamese people keep refining their taste, it\u2019ll thrive here. Maybe I should learn to cook in Japan, then come back and open a place.\u201d<\/p>\n
